Ingredients:
1 pack Koopmans Custard
1 pack Koopmans Cornflour
For the cookie base:
- 150 g Biscoff cookies or other cookies of your choice
- 100 g butter
- 1 teaspoon cinnamon
For the filling:
- 200 g of Koopmans Vanilla Custard
- 800 ml milk
- 300 g cream cheese
- 1 piece of ginger (2x1cm, optional)
- 1 teaspoon almond extract (optional)
For the fruit topping:
- 200 g fruits or red fruit (frozen) Strawberries, blueberries.
- 1 tablespoon of Koopmans cornflour.
Instructions:
1️⃣ Make the Cookie Base
1. Line a springform pan with baking paper.
2. Crumble the Biscoff cookies.
3. Melt the butter and mix it with the cookie crumbs and cinnamon.
4. Press the mixture into the pan to form an even base. Chill in the fridge while preparing the filling.
2️⃣ Prepare the Custard Filling
1. Mix 200 g of Koopmans Vanilla Custard with 200 ml of milk.
2. Heat the remaining 600 ml of milk in a saucepan.
3. Add the custard mixture to the warm milk and stir for 3 minutes until thickened.
4. Incorporate the cream cheese, grated ginger (optional), and almond extract (optional) into the custard mixture.
5. Pour the filling over the cookie base and let cool for 3 hours at room temperature. Transfer to the fridge until ready to serve.

1. Heat the fruits in a saucepan with 50 ml of water.
2. Mix the Koopmans Cornflour with 1 tbsp of water, then add it to the saucepan. Cook for 5 minutes.
